Vegetable Scramble Tacos
Start your day with this delicious protein packed breakfast! Eggs are a great healthy way to get your protein in the morning. They are full of vitamins such as B6, B12, zinc, and inhibiting hunger hormone leptin. Protein helps to activate your metabolism and stabilize your blood sugar, which is exactly what you want first thing in the morning!
Starting your day with protein also helps you to stay fuller longer. Protein is needed for healthy muscles, skin, blood and nails- it is the structure of our cells. Enjoy this tasty breakfast knowing that it’s helping your body get started for your day!
Serves 2
*All organic, seasonal, local vegetables when possible
- 1 teaspoon of olive oil or coconut oil
- 1 handful of chopped heirloom carrots
- 2 handfuls of spinach, chopped
- 1 handful of chopped mushrooms
- 2 egg whites/ 1 egg yolk
- 1 avocado
- 1 teaspoon of white sesame seeds
- 2 organic sprouted corn tortillas or 1 gluten free tortilla (I like Food for Life brand)
*If you have a corn allergy or sensitivity please substitute tortilla with another tortilla or do not use
Directions:
- Pour oil into pan. Put carrots in pan to start cooking. Cook for 2-3 minutes on low heat. Take out.
- Scoop or slice avocado onto plate.
- Cook next vegetable- mushrooms for 2-3 minutes on low heat.
- Chop spinach.
- Add cooked carrots and chopped spinach into pan.
- Add eggs and scramble.
- Place scramble onto plate and sprinkle sesame seeds on top. Enjoy!
Cooking tortillas:
- Place tortilla in pan with ¼ cup of water and 1/4 teaspoon of coconut oil.
Heat low for 20-30 seconds until tortilla is warm and soft. Put on plate and put vegetable scramble on top with avocado.
